28 Mar Enjoying the Journey with Brian
This month’s Dish is brought to you by ClearPath’s own Brian Waterhouse!
Brian has been married to his wife, Beth, for over 28 years and is the proud dad of two children. With one child graduating from the University of Southern California and the other from Arizona State University, the annual football game between USC and ASU has become a big, family-fun rivalry event.
While Brian enjoys eating at the local Granville Inn, his favorite restaurants are actually not found here in Columbus! While on a conference in Las Vegas, he had the opportunity to dine at both Mon Ami Gabi and Giada’s and he fell in love with the fine dining and, of course, the view! He recommends booking a window seat facing the strip.
As his mother-in-law would say, “Enjoy the journey!”
At home, Brian enjoys Lemon Pepper Pasta and Mahi Mahi. “Nothing beats this fresh dish on the grill! Top it off with a Pinot Noir and while it may not be Italy, it’s molto buona!”
Here’s what you’ll need:
- Green Olive Company’s Lemon Pepper Pasta
- Mahi Mahi
- Lemon Juice
- Olive Oil
- St. John’s Spice
- Pinot Noir (or similar red wine)
Instructions:
- Pair the freshly made lemon pepper pasta with Mahi Mahi marinated in lemon juice, olive oil and St. John’s Spice.
Prepared on the grill, this meal is PERFECT to enjoy with a sunset! Thanks Brian!
